1.Overview

When I chopped it for cooking, it smelled strangely.

2.Test results

  • Appearance: There was no particular difference compared to normal products.
  • Sensual test: I found a bad smell. (feces odor)
  • GC/MS Analysis: Scotol (approximately 100ppm) and p-cresol (approximately 1000ppm) were recognized.

3.Conclusion

It was estimated to be an off-flavor due to scatol and p-cresol caused by amino acid decomposition by bacteria.

4.Reference

Scotol is generated from tryptophan, an amino acid contained in bamboo shoots, and p-cresols are generated from tyrosine.
