1.Overview
I bought natto, but I couldn't eat it because of the strong ammonia smell.
2.Results of the survey
Ammonia odor is generated by natto bacteria. About 12 to 16 hours after aging, ammonia begins to increase, and natto odor is involved in ammonia, organic acids, fatty acids, diacetyl, etc. It is caused by a decrease in the quality of natto, and is not harmful to eating, but is not suitable for food.
