1.Overview
When I ate the melon, it tasted unusually, the tip of my tongue hurt immediately after, my mouth was crisp, and the back of my throat was burnt.
2.Results of the survey
The melon, which had a complaint, was over ripe from the handle and began to rot. Since melons are known to produce volatile substances in the process of maturity, these substances were tested to detect 650 ppm of ethanol and 420 ppm of ethyl acetate.
(Ethyl acetate causes irritation symptoms of eyes, nose, and throat at about 400 ppm to humans.)
3.Conclusion
It is thought that volatile substances such as ethyl acetate generated by over ripening of melon stimulate the mouth, tongue, etc.
4.Countermeasures
Over ripe fruits and desolate fruits produce a lot of volatile substances such as ethanol and ethyl acetate, so you need to be careful when purchasing or eating.
