1.Overview

When I boiled the sweet potatoes, it had an eg taste.

It is thought to be homogentidine derived from tyrosine. Homogentidine acid is an eg-flavored ingredient such as sweet potatoes and vines. There is no harm to eat.
In addition, sulfuric acid and calcium oxate, which are the components of acne, can also cause eg flavor, but can be removed by boiling it.

In order to effectively remove homogentidine acid, rice juice, baking soda water, etc. are used. This is because when boiled in a weak alkaline solution, homogentidine acid is decomposed, eluted, and removed.
