Complaint Case Studies Coloring of burdock
1.Overview
After purchasing the burdock, immersed in water and shredded overnight, fried in tempura flour and egg white, served on a plate, left it and turned blue.

2.Results of the survey
It is presumed that the burdock component, hulabon, turned blue due to changes in pH, etc. (pH is higher by adding baking soda to tempura or tempura flour containing baking soda). (The complaint was pH 7.4 for the pH 5.9 in the control product.)
3.Conclusion
It is one of the pigments of burdock, so it is not harmed.
